TLC – Tuna & Lettuce Burrito

Fed up of sandwiches and salads? This is a high protein, low carb, great alternative. Biting in to a crisp lettuce leaf is far more exciting then limp, white bread. Spend 5 minutes prepping the filling the night before and put it together at work. Easy, healthy, tasty and guaranteed to get people talking…… #unleashthechef.

All you need is:

  • Tin of tuna
  • Peppers
  • Spring onion
  • Cherry tomatoes
  • Toasted seeds
  • Baby gem/Cos lettuce
  • Lemon
  • Olive oil

The night before, simply slice your spring onions and red peppers into thin strips and your tomatoes into quarters, tub up and keep in the fridge. Wash and pick three of the centre leaves from the baby gem and pat dry. Wrap the leaves in wet paper towel and keep in the fridge-this keeps them crisp.

When it come to lunch time, simply open and drain the tuna and dress with a little lemon juice and olive oil.

Fill each leaf with your sliced veg, and top with the dressed tuna. Drizzle over more lemon juice and olive oil and sprinkle with your seeds.
